American Culinary Federation Food Waste

I was asked to sit on a panel at the National Convention of the American Culinary Federation in Orlando on August 7th. What is this panel discussing, Climate of Change: Chefs as Advocates for Sustainability and Food Waste! I am truly humbled and honored to be even considered but to actually asked, WOW! Maybe, we can bethechage! If we think food waste starts in our kitchens, then we are so out of touch and we need help. Food waste starts by our guests demanding better farming, full useable products, our vendors bringing us innovation and chefs thinking outside the box!
